Dina & Paul

Husband and wife team, Dina Velocci and Paul Santoro are serial entrepreneurs who share Italian-American heritage and a love of great food, great wine, and unique dining experiences. Dina comes to the restaurant business naturally where her family-owned and operated an award-winning deli in New York City. Paul has fished the PM for more than 30 years and owned property on the Little South Branch for more than 20 years. Dina fell in love with the area and its people as well, and in 2018 they made Baldwin their home. With an eye for preserving historic buildings and seeing an unmet opportunity, Dina and Paul embarked on a three-year process to envision, redevelop and build one of west Michigan’s best dining establishments.

Although active hands-on owners, both Dina and Paul are Certified Registered Nurse Anesthetists with Dina maintaining an active clinical practice while Paul focuses on anesthesia revenue cycle and practice management. Together, Dina and Paul stay busy with five children, six grandchildren and still find time to travel, boat and, fish both fresh and saltwater.
